burritos for breakfast

i love burritos. chicken, beef, pork. they’re all good. you may also know i love breakfast. combine the two and i’m a happy camper. obviously there are many ways to make a breakfast burrito. eggs are almost always involved. so is salsa or pico de gallo. and of course some sort of tortilla. after that it’s free game.

this is how i play.

breakfast burrito

1 large whole grain tortilla

1 smallish red potato, diced (no need to peel)

1/2 avocado, sliced

1 egg

pico de gallo (nugget markets makes the best, just in case you were wondering)

salt and cracked black pepper

lay the avocado slices in the center of the tortilla. heat a pan over medium high heat and sautee the potato in extra virgin olive oil until just barely brown (5-8 minutes). remove and place over avocado. cook egg any way you like, i scramble mine with a bit of milk and salt and pepper (more on eggs later). put egg on top of potato. spoon pico over egg. fold the tortilla over the mound of tastiness and enjoy.

a (mostly) local quiche

i love eggs (from the farmer’s market). and cheese. and leeks (from the farmer’s market), oh man do i love leeks. bacon (from the farmer’s market) too! and apples (from the farmer’s market). and while quite tasty, sage would have put this quiche over the top. i guess there’s always next time.

leek, apple and bacon quiche

crust:

2c ap flour

1 tsp salt

1/2c butter

1/4-1/2c ice water

filling:

5 strips bacon,  diced

2 large leeks, cleaned, and sliced

1 apple, diced

4 large eggs

1/2c sharp cheddar cheese

~1c heavy cream

salt and pepper

crust: mix dry ingedients and cut in butter (or use a food processor). add ice water slowly until the dough just comes togehter. press into a disk and wrap with plactic. refrigerate for at least 30 minutes (1 hour is better)

heat oven to 350F

roll dough into large circle and place into pie pan. (this will give you enough for an eleven inch tart pan)

filling:

heat bacon over medium high heat and cook until desired doneness. remove bacon and add leeks and apples. cook until leeks are soft. in a separate bowl, whisk eggs, cream, cheese, and salt and pepper. add leeks, apples, and bacon to egg mixture. pour into crust. bake for about 4 minutes, or until an inserted knife comes out clean.

let stand for 10 minutes before serving.
